Sweet and Spicy Mustard-Glazed Chicken Wings

Take a break from traditional Buffalo wings with this addictive, sweet and spicy mustard-glazed chicken wings recipe. These chicken wings are simply browned, then glazed in the no-cook sauce for a super-easy party snack that needs no dip.Makes About 40 Pieces Sweet and Spicy Mustard Chicken Wings

Prep Time: 15 minutes
Cook Time: 40 minutes
Total Time: 55 minutes

Ingredients:

  • 5 lbs whole chicken wings, cut into pieces (one wing makes 2 pieces – the “flat” and the “drum”)
  • salt to taste
  • 1/4 cup Dijon mustard
  • 1/4 cup yellow mustard
  • 1/2 cup honey
  • 1 tbsp cider vinegar
  • 2 tbsp Louisiana hot sauce (Gluten Free)
  • 1/2 tsp fresh ground black pepper
  • cayenne pepper to taste

Preparation:

Preheat oven to 450 degrees F.If necessary, cut whole wings into two pieces, discarding the tips. Cover two baking sheets with heavy-duty foil and spray lightly with non-stick oil. Season the wings with salt and spread out evenly on baking pans. Bake for about 20 minutes, remove and turn the wings over; cook for another 15-20 minutes until the wings are cooked through and well-browned.While the chicken wings are baking mix the rest of the ingredients in a large mixing bowl. Taste sauce and add more spice if so desired. After the wings are cooked, transfer into the bowl (use tongs or slotted spatula so the grease stays on the pan). Toss with a spatula to completely coat. Let sit for 5 minutes and toss again. The chicken wings will soak in the sauce as they rest and the glaze will thicken as it cools.Toss one last time and transfer to a serving platter. Can be served warm or room temp.

Gluten Free Dinner: Herb Stuffed Chicken Breast
This meal was a hit! I adapted this recipe from a more complicated turkey dish Whole Foods recommended. We served this gluten free dinner with sauteed yams and a kale salad.

Serves 4
Preparation Time: 30 Minutes

4 Chickens Breasts (Sliced down the middle, but not completely through)
Butter
1 Garlic Clove (Chopped)
1 Cup Leeks (Chopped)
1/4 Cup Mushrooms (Chopped)
1 Cup Gluten Free Bread Crumbs (Udi’s Bread is great for big bread chunks)
1/4 Cup of Romano Cheese (Grated)
1.5 tsp Parsley (Chopped)
1.5 tsp Rosemary (Chopped)
1.5 tsp Sage (Chopped)
1.5 tsp Thyme (Chopped)
Salt & Pepper to taste

Preheat oven to 350. Melt 2 TBS of butter or sub in olive oil in a large frying pan over medium heat. Add garlic, cook until soft. Add leeks and cook until soft. Add mushrooms, cook until soft. Remove from heat and stir in bread crumbs, cheese, and all the spices.

In a medium sized ceramic baking dish, arrange all 4 chicken breast so the are open faced. Slice butter and put a 1/2 TBS in the open faced of the chicken. Stuff with filling until the filling is gone. Drizzle with olive oil.

Bake for 20 minutes covered with aluminum foil. Then bake another 20 minutes without a cover or until chicken is cooked through and stuffing has browned. Let cool and then serve your gluten free dinner!

Gluten Free Spanish Tortilla

This is a really delicious gluten free dinner recipe that is very similar to a quiche.

A ‘Spanish Tortilla‘ is usually an omelette or quiche like dish, with potatoes and without a crust.

Serves 6 people.
Time: 40 minutes.

Ingredients:

3 teaspoons extra-virgin olive oil, divided
1 small onion, thinly sliced
1 cup precooked diced red potatoes, (see Tip)
1 tablespoon chopped fresh thyme
1/2 teaspoon smoked paprika
6 large eggs
4 large egg whites
1/2 cup shredded Manchego, or Jack cheese
3 cups baby spinach, roughly chopped
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 Avocado
2 Tablespoons of Salsa
2 Tablespoons of Sour Cream

Technique:

Heat 2 teaspoons oil in a medium nonstick skillet over medium heat. Add onion and cook, stirring, until translucent, 3 to 4 minutes. Add potatoes, thyme and paprika and cook for 2 minutes more.

Lightly whisk eggs and egg whites in a large bowl. Gently stir the potato mixture into the eggs along with cheese, spinach, salt and pepper until combined. Wipe the pan clean; add the remaining 1 teaspoon oil and heat over medium heat. Pour in the egg mixture, cover and cook until the edges are set and the bottom is browned, 4 to 5 minutes (it will still be moist in the center).

To flip the tortilla, run a spatula gently around the edges to loosen them. Invert a large plate over the pan and turn out the tortilla onto it (the middle usually isn’t cooked, so be careful not to loose the egg batter). Slide the tortilla back into the pan and continue cooking until completely set in the middle, 3 to 6 minutes. Garnish with avocado, salsa, and sour cream. Serve warm or cold.

Mexican Taco Stew (Gluten Free)

1 pound ground turkey
1 medium onion
2 garlic cloves (minced)
2 TBS taco seasoning (gluten free)
4 cups low-sodium chicken broth
2 medium zucchini or summer squash (I sometimes include both)
2 (15 oz) cans of no-salt black beans (rinsed)
1 (14.5 oz) can of diced tomatoes
1 cup frozen corn
1 cup of medium salsa
Top with avocados, sour cream, and corn chips.

This is the easiest and most delicious soup I make. On a cold Seattle night, I throw together this gluten free stew and my husband and I are warm and toasty once again!

In a large pot, saute onions and garlic, then brown turkey meat. Once meat is browned add in taco seasoning. Add remaining ingredients and simmer uncovered for 15-20 minutes so the soup reduces a bit. Serves 6.

1 Package of Gluten Free Pasta Spirals (Scharr or another non-rice brand)
1/2 cup Mayonaise (to taste)
1/3 cup of White Balsamic Vinegar (to taste)
2 large distilled red peppers (chopped)
1/3 cup of chopped fresh parsley
2 Garlic cloves (minced)
1 block of Smoked Mozzarella (cubed)

Method: Boil pasta until soft. Rinse pasta in cold water until pasta has cooled. Mix in all ingredients until the salad is wet. Serves 6.

Almond & Quinoa Flour Dinner Bread Roll Recipe

1 Honeyville Blanched Almond Flour
1 cup of Bob’s Red Mill Organic Quinoa Flour
3 TBS flax seed meal
1/4 cup dry milk powder
1/2 tsp. baking soda
2 tsp. baking powder
Pinch of salt
1/4 cup shortening
1 tsp. apple cider vinegar
1/4 cup extra virgin olive oil
2 large eggs
2/3 cup plain yogurt (dairy or non-dairy)
2 1/4 Tbs. (1 package) rapid rise or bread machine yeast
Milk or olive oil to brush the tops

Method: Preheat oven to 350º F.

In a large bowl whisk together dry ingredients except yeast. Cut the shortening (should be at room temperature) into small pieces and stir into dry ingredients with a mixer.

In another bowl, mix together the liquid ingredients until combined. Slowly add liquid ingredients to the dry ingredients. Pour in yeast and mix for one minute until yeast is integrated.

Prepare muffin tins or popover trays by oiling with Canola Oil spray.  Scoop equal amounts into each tray and smooth the tops. Brush the tops with milk or egg yolk.  Cover and rise for 20 minutes.  Bake at 350º F convection or 375º F static for 15 minutes, or until set.

This is a great high protein, low sugar bread roll. It’s light, fluffy, and goes well with soups, turkey dinners, and anything else!

Tips For Having A Very Happy Gluten Free Thanksgiving

The holiday season is my favorite time of year, hands down. All the yummy breads, desserts, and meats along with family gatherings, warm fires, and classic movies – who could not love it!

Being gluten free doesn’t stop me from thoroughly enjoying the holidays – here’s how I do it.

Turkey: Obviously, my family doesn’t stuff the turkey with a gluten stuffing. With Udi’s Gluten Free Bread, Rudi’s Gluten-Free Breads, Wheatless in Seattle bread, and Glutino’s bread crumbs we have lots of bread crumb options for making gluten free stuffing. Jules Gluten Free has a great Thanksgiving stuffing recipe that I highly recommend.

Organic Creamery Goat Cheese

Yams: Most Thanksgiving baked yam dishes are gluten free, but not sugar free. I never really understood why it’s tradition to bake mashed yams with brown sugar and then marshmallows on top. Yams are already so sweet on their own! Here is my Thanksgiving Day Yam Masher Recipe -

6-8 Yams (Baked or steamed, then mashed)
1-2 packages of Goat Cheese (my favorite is Organic Creamery Goat Cheese)
Technique: Mix in goat cheese when the yams are still warm so the cheese blends in. That’s it! So easy!

Mashed Potatoes: Are naturally gluten-free. Add a little milk and garlic and voila! You have light and fluffy mashers!

Next up is Gravy: If you are used to making your gravy with wheat flour, it’s easy to change to an all purpose gluten free flour or corn starch. Both thicken gravy just as well as wheat flour.

Bread Rolls: A couple weekends ago I took a class from Jules Gluten Free that taught us how to make gluten free beer bread rolls. They were simply put, the best rolls I have ever tasted. That said I am always experimenting with mixing Jules flour with quinoa flour, so I can get more fiber, but you mine as well go for it on Thanksgiving and bake the real

Vegetables: In my family we usually make green bean casserole with gluten free cream of mushroom soup and crispy onions baked on top. But now we just opt to steam green beans to reduce the amount fat and calories.

Mediterranean Snack Gluten Free Lentil Crackers

Snacks: Of course there are lots of snack options out there, most involve cheese and crackers, veggies, fruit, and/or cured meats. Obviously, most of these items are gluten free, except crackers. My favorite crackers are Mediterranean Snack’s Gluten Free Rosemary Herb Lentil Crackers.

Desserts: The best part of Thanksgiving are the desserts! Let’s see there is pecan pie, pumpkin pie, pumpkin cheesecake, and whipping cream as the main staples. If you’re creative then apple pie is thrown into the mix, along with cookies, and cobblers. The list is endless!

Jules Gluten Free has a great gluten free crust, if you are hinkering to make your own crust. She also has a fabulous graham cracker mix for the cheesecake variety. I personally don’t have time to make crusts, unless I’m baking something like apple or berry pies. Whole Foods has their own brand of gluten free crusts that are absolutely flawless. Flying Apron (tends to be vegan) and few other brands sell pre-made pies and crusts out of Whole Foods and PCC in Seattle.

An Overview of Jules Gluten Free Thanksgiving Baking Class

If you didn’t get a chance to attend one of Jules Shepard’s Gluten Free baking classes last weekend, not to worry, you still have many opportunities to catch her. Jules Gluten Free travels all over the US, educating, giving tips, and promoting awareness multiple times a year.

I had the pleasure of attending her Thanksgiving baking class at Meritage Meadows Inn and wow was it a treat!

First off the Meritage Meadows Inn is a stunning property 10 minutes outside of Redmond. The property is fairly large sitting on acres of undeveloped land, while the 10,000 square foot house is large, expansive, yet still offers the comforts of home.

We couldn't wait to get her food in our bellies.

Our Seattle gluten free class was held in the dining room next to their huge kitchen.

Jules first started with mixing together her hamburger and hot dog bun recipe, which works really well for rolls and regular bread. She mixed her flour with a little almond flour and used Green’s gluten free beer to give it a little fluff. The end result was to die for! Pictures below.

Jules also put together a Thanksgiving stuffing, packed full of apples, cranberries, carrots, celeries, onions, and used vegetable broth as a base. We all devoured this as well and it gave a lot of us some fun ideas for this years T-Day dinner.

Next up was her fabulous gluten free crust. I personally don’t make a lot of gluten free crusts, because I’m just not very good at it. I think I might try hers this year. She put together an apple pie for us – it was hands down the best apple pie I’ve had.

Last but not least, Jules baked up a graham cracker crust pumpkin pie from her graham cracker mix. I have never had pumpkin pie prepared this way, it really makes the dessert much richer and much more delicious.

Of course I left with another bag of her gluten free all purpose flour, her graham cracker mix, and cookie mix. I am really excited to put these to good use next week! If I can get enough time this evening, I may try out her beer batter rolls.

I highly recommend taking a class by Jules Shepard. She is the best there is, but not only that, she is a friendly, outspoken, and accessible celebrity baker. Her products and classes are worth every cent and hey, you may make a few new friends out of it as well.

Recipe: Gluten-Free Quinoa Flour Belgian Waffles

These are so delicious! This is another altered Jules Gluten Free recipe. She knows her stuff! Again I cut out the sugar and mixed with Quinoa Flour for a nice low sugar, high fiber/protein treat.

Gluten-Free Quinoa Flour Belgian Waffles

2 eggs separated (use both the saved yolk and whipped egg whites)
2 Tbs. of shortening
2 Tbs olive oil
1/2 cup of Jules All Purpose Flour
1 cup of Bob’s Red Mill Organic Quinoa Flour
2 tsp. baking powder
A dash of agave nectar
1/2 tsp salt
1 tsp cinnamon
1 tsp vanilla extract
3/4 cup milk (you can sub in soy, almond, or rice milk)
Top with fresh cut strawberries and unsweetened whipped cream

Preheat waffle iron to low or med-low.

Mix together egg whites on high, until egg whites are stiff. Set aside.

Combine all of the ingredients above in a large bowl. When everything is smooth, fold in egg whites until the dough is fluffy.

Put two large spoon fulls of batter on the waffle iron and remove when the iron gives you the green light.

Recipe: Gluten-Free Garlic Quinoa Flour Breadsticks

I altered Jules Gluten Free‘s bread stick recipe to have less sugar and use Quinoa flour in addition to her baking flour. I do this because I cannot eat as much sugar or starches as the recipe calls for. Quinoa flour is a very high protein and fiber-rich flour. It has a slight taste of Quinoa, but is undetectable when mixed with Jules All Purpose Flour.

These little goodies were absolutely delicious and fluffy!

Gluten-Free Garlic Quinoa Flour Breadsticks

Preheat oven to 350 F.

3/4 tsp. apple cider vinegar
1/4 cup shortening
2 eggs
1 Tbs yeast
1 cup of plain yogurt
1 cup of Jules All Purpose Flour
1 cup of Bob’s Red Mill Organic Quinoa Flour
1/2 tsp baking soda
2 tsp baking powder
pinch of salt
crushed fresh garlic (sprinkled on top)
brush with olive oil

Mix together all ingredients until lumps are gone. Dust pastry mat with cornstarch and also dust your hands. Take a small handful of dough and form it into a breadstick shape. Lay the breadsticks on a cookie sheet that has been greased with olive oil. Sprinkle on toppings and bake for 10-12 minutes, or until top is golden brown and the dough has risen.
