One of my favorite pie spots in Seattle is a nice gluten free dessert pie shop called Jodee’s Desserts. Not only are they gluten free, they are dairy free, and low-glycemic as well. Everything is made out of coconut, fruits, and veggies, all blended and uncooked.

My favorite items are the carrot cake, pumpkin pie, key lime pie, banana cream pie, and Tiramisu. They also have chocolate mousse pie, chocolate cherry pie, chocolate malt pie, pecan praline pie, peppermint patty pie, and other seasonal flavors.

Jodee’s Desserts also hand make smoothies, coffee, chocolates, and soups.

Jodee’s takes extreme pride in hand-making raw, organic dessert pie products. They use only the purest Organic products. As a part of a complete awareness to product purity, they use the Tensui Water Filtration System (www.TensuiWater.com) in all their pie preparations. Their dessert pies are blended, without the need for baking, which sustains a nutritionally rich product. I can attest, the results are simply some of the most delicious pies I have tasted.

This Seattle gluten free location is relatively new but I’ve already lost count of how many times I’ve been in. I don’t feel like I’ve eaten too much sugar after having one of Jodee’s treats, which is something I have to think about since I’m pre-diabetic.

Tips For Having A Very Happy Gluten Free Thanksgiving

Gluten Free Pumpkin Pie

The holiday season is my favorite time of year, hands down. All the yummy breads, desserts, and meats along with family gatherings, warm fires, and classic movies – who could not love it!

Being gluten free doesn’t stop me from thoroughly enjoying the holidays – here’s how I do it.

Turkey: Obviously, my family doesn’t stuff the turkey with a gluten stuffing. With Udi’s Gluten Free Bread, Rudi’s Gluten-Free Breads, Wheatless in Seattle bread, and Glutino’s bread crumbs we have lots of bread crumb options for making gluten free stuffing. Jules Gluten Free has a great Thanksgiving stuffing recipe that I highly recommend.

Organic Creamery Goat Cheese

Yams: Most Thanksgiving baked yam dishes are gluten free, but not sugar free. I never really understood why it’s tradition to bake mashed yams with brown sugar and then marshmallows on top. Yams are already so sweet on their own! Here is my Thanksgiving Day Yam Masher Recipe -

6-8 Yams (Baked or steamed, then mashed)
1-2 packages of Goat Cheese (my favorite is Organic Creamery Goat Cheese)
Technique: Mix in goat cheese when the yams are still warm so the cheese blends in. That’s it! So easy!

Mashed Potatoes: Are naturally gluten-free. Add a little milk and garlic and voila! You have light and fluffy mashers!

Next up is Gravy: If you are used to making your gravy with wheat flour, it’s easy to change to an all purpose gluten free flour or corn starch. Both thicken gravy just as well as wheat flour.

Bread Rolls: A couple weekends ago I took a class from Jules Gluten Free that taught us how to make gluten free beer bread rolls. They were simply put, the best rolls I have ever tasted. That said I am always experimenting with mixing Jules flour with quinoa flour, so I can get more fiber, but you mine as well go for it on Thanksgiving and bake the real

Vegetables: In my family we usually make green bean casserole with gluten free cream of mushroom soup and crispy onions baked on top. But now we just opt to steam green beans to reduce the amount fat and calories.

Mediterranean Snack Gluten Free Lentil Crackers

Snacks: Of course there are lots of snack options out there, most involve cheese and crackers, veggies, fruit, and/or cured meats. Obviously, most of these items are gluten free, except crackers. My favorite crackers are Mediterranean Snack’s Gluten Free Rosemary Herb Lentil Crackers.

Desserts: The best part of Thanksgiving are the desserts! Let’s see there is pecan pie, pumpkin pie, pumpkin cheesecake, and whipping cream as the main staples. If you’re creative then apple pie is thrown into the mix, along with cookies, and cobblers. The list is endless!

Jules Gluten Free has a great gluten free crust, if you are hinkering to make your own crust. She also has a fabulous graham cracker mix for the cheesecake variety. I personally don’t have time to make crusts, unless I’m baking something like apple or berry pies. Whole Foods has their own brand of gluten free crusts that are absolutely flawless. Flying Apron (tends to be vegan) and few other brands sell pre-made pies and crusts out of Whole Foods and PCC in Seattle.

An Overview of Jules Gluten Free Thanksgiving Baking Class

If you didn’t get a chance to attend one of Jules Shepard’s Gluten Free baking classes last weekend, not to worry, you still have many opportunities to catch her. Jules Gluten Free travels all over the US, educating, giving tips, and promoting awareness multiple times a year.

I had the pleasure of attending her Thanksgiving baking class at Meritage Meadows Inn and wow was it a treat!

First off the Meritage Meadows Inn is a stunning property 10 minutes outside of Redmond. The property is fairly large sitting on acres of undeveloped land, while the 10,000 square foot house is large, expansive, yet still offers the comforts of home.

Our Seattle gluten free class was held in the dining room next to their huge kitchen.

Jules first started with mixing together her hamburger and hot dog bun recipe, which works really well for rolls and regular bread. She mixed her flour with a little almond flour and used Green’s gluten free beer to give it a little fluff. The end result was to die for! Pictures below.

Jules also put together a Thanksgiving stuffing, packed full of apples, cranberries, carrots, celeries, onions, and used vegetable broth as a base. We all devoured this as well and it gave a lot of us some fun ideas for this years T-Day dinner.

Next up was her fabulous gluten free crust. I personally don’t make a lot of gluten free crusts, because I’m just not very good at it. I think I might try hers this year. She put together an apple pie for us – it was hands down the best apple pie I’ve had.

Last but not least, Jules baked up a graham cracker crust pumpkin pie from her graham cracker mix. I have never had pumpkin pie prepared this way, it really makes the dessert much richer and much more delicious.

Of course I left with another bag of her gluten free all purpose flour, her graham cracker mix, and cookie mix. I am really excited to put these to good use next week! If I can get enough time this evening, I may try out her beer batter rolls.

I highly recommend taking a class by Jules Shepard. She is the best there is, but not only that, she is a friendly, outspoken, and accessible celebrity baker. Her products and classes are worth every cent and hey, you may make a few new friends out of it as well.

Slimy and Sickly (but still yummy) Seattle Gluten-Free Halloween Treats!

Most of you may know I have a day job…well several day jobs to be exact. One of which is I manage marketing for a company who produces a fun kids drink called Crayola™ Color Coolerz®. I took some time over the last few days to make some spooky Halloween drinks and treats out of their Coolerz and thought I’d share. Here are the results!

Organic & Locally Made Valentine’s Day Chocolates

Okay, in honor of Valentine’s Day I just HAVE to talk about some of my favorite chocolates.

While chocolate on Valentine’s Day is so over, I think we all still keep a warm spot in our hearts toward someone who gives us a delectable box of euphoric morsels.

Of course, I would never recommend just ANY chocolates. Hershey’s watch out, there are better options now without high fructose corn syrup.

Fran’s Chocolate has to be my all time favorite, especially the salted chocolate caramels….yeah I end up eating the whole box in one sitting. Not a good choice, but these little morsels are so delicious and tantalizing that devouring them is usually the only way the human body can respond. They have a whole Valentine’s Day Collection that is top-notch and a sure winner with the ladies. Headquarters in Seattle, WA.

Theo’s is a fair trade chocolatier located in Fremont. They mostly sell bars of chocolate like spicy concoctions with Chile, Citrus Orange, Cherries and Almonds, and Mint. You can never go wrong with any of their flavors because most of them are low in sugar and still taste delicious. Headquarters in Seattle, WA

Dagoba Chocolate
Available at PCC and Whole Foods

Dagoba Chocolate is another great chocolatier that is all organic, has a high percentage of cacao, and natural, lower amounts of sugars. My favorite is the lavender blueberry and their spicy chile dark chocolate. Headquarters in Ashland, OR.

Moonstruck Chocolatier
Available at PCC, online, and in Oregon

I’d say out of all the chocolate listings here, Moonstruck is the most artful chocolatier. They sell beautiful packages, have a unique brand, and also make chocolate shapes, flavors, and truffles that are out of the ordinary. Headquarters in Portland, OR.
